Elevated Green Bean Casserole

Ingredients:
Onion Rings
1 large
onion
½ cup
flour
½ cup
milk
1 cup
breadcrumbs
1 tsp.
salt
Cream of Chicken
4 Tbs. butter
6 Tbs. flour
2 cups
chicken stock
1 cup
whole milk
Salt to
taste
Casserole
4-5
cups fresh green beans
1 head
roasted garlic
1
medium yellow onion chopped
2 Tbs. butter
Cream
of Chicken (from above)
Onion
Rings (from above)
Cooking Directions:
- Preheat oven to 400° F.
- Slice a large yellow onion into rings.
- Dip each onion ring into a small bowl of the flour, next a small bowl of the milk, and lastly into a small bowl of the breadcrumbs & salt.
- Place breaded onion rings on a lightly greased baking sheet.
- Bake for 8-10 minutes.
- While onion rings are baking, slice off the bottom of an entire head of garlic, place garlic on piece of tin foil, and drizzle garlic with EVOO and S&P. Wrap tinfoil completely around garlic and bake in oven (with the onion rings) until tender. (Approx. 20 minutes)
- Start the cream of chicken by melting the butter in a saucepan over medium-high heat.
- Once butter is melted, add flour and whisk together, breaking apart any lumps that might form. Cook on medium-high heat for 1 minute.
- Add chicken stock and milk to butter-flour mixture, whisking continuously as it simmers on low until it starts to thicken.
- Once this mixture has thickened to your desired thickness, season with salt.
- In a different skillet, melt butter in frying pan until warm, and then add chopped onion. Sauté until onions are tender, but not brown.
- Cut green beans into 2-inch pieces and blanch for 3 minutes.
- In a 9" x 13" baking pan, add blanched beans, cream of chicken, roasted garlic, and sautéed onion. Combine all ingredients together until well mixed. Spread out evenly on pan.
- Top beans with onion rings and bake in oven at 350° F for 30 minutes or until golden brown and heated all the way through.
