Holy Guacamole!

What’s green and red and has deliciousness smothered all over it? Dad’s famous Christmas guacamole. It is so divine that we call it HOLY!

Although guacamole might not be the first thing that comes to mind when you think of holiday foods, it’s one of Beckie’s family’s favorite Christmas food traditions.

Holy Guacamole + homemade tortilla chips make the perfect finger food combo for Christmas and New Years Eve parties.

Try out this red and green appetizer this season, and you’ll be tempted to make it all year round!

Holy Guacamole!

Ingredients:
4 medium-sized avocados
1 (8 oz.) package cream cheese
¾ cup sliced black olives
¼ cup your favorite salsa
1/8 cup finely diced onions
½ tsp. chili powder
½ tsp. salt
½ freshly squeezed lime
1 large diced tomato

Directions:

1.     Begin by mixing (and mashing!) the avocados and cream cheese together in a medium-sized bowl.
2.     Once the avocados and cream cheese are well mixed (and mashed!), stir in the rest of the ingredients, except for the tomatoes.
3.     When you’re ready to partake of this green goodness, fold in those red tomatoes.
4.     Make homemade chips (recipe below) or use store bought corn chips and start scooping away.
5.     Enjoy!

Homemade tortilla chips

Ingredients:
1 package of 6-inch flour tortillas
vegetable oil
salt to taste

Directions:

1.     Fill pot 2-3 inches deep with vegetable oil. Heat up oil until it reaches 350° F.
2.     Cut each of the flour tortillas into 6 triangles.
3.     Place 2-3 triangles at a time into heated oil. Fry until lightly golden and crispy, flipping chips over half way through.
4.     Sprinkle each chip with salt immediately after it is taken out of the oil.
5.     Allow chips to cool before consuming with Holy Guacamole in order to avoid any taste bud killing activities!
6.     Holy Moly, Enjoy!
